Healthy Comfort Food – Rice with Butternut Squash and Cashew Nuts

We all have days when all we want to eat is stodgy food filled with carbs and flavour, unfortunately these cravings tend to throw us off track and we end up binging on junk food instead.

Well, I have found a solution to these dark times.

Here is a recipe I made a few years ago for the perfect combination of stodge and comfort in one bowl without the dirty feeling of guilt lingering afterwards.

This recipe is about 3 servings…ish so it’s great to throw in the fridge for a quick meal the next day!

YOU WILL NEED

  • 1/2 Cup Rice
  • 1/2 Butternut Squash Diced
  • 50g Cashew Nuts
  • 1/2 Chopped Onion
  • 1 Litre Vegetable Stock

THEN THE MAGIC HAPPENS

  • Mix up the vegetable stock in a 1 litre jug of hot water
  • Pour the mix into a saucepan and pour in your rice
  • Set the hob to a high heat until the water is bubbling
  • Add the squash, onions and nuts to the pan, stir and turn the heat down
  • Let it simmer for about 30 minutes or until cooked, stirring occasionally.

 


 

TIP #1 – Brown rice is preferable because it takes longer to cook; it will soak up more of the flavour and won’t stick to the bottom of the pan so quickly.

TIP #2 – You may have to use more water for the rice if it isn’t cooked when the stock has been absorbed, use tap water but use the same jug that you used before, it will have some of the stock remains at the bottom and add more flavour.

TIP #3 – This is a big batch, don’t eat the whole thing in one go or you really will be having your week of carbs in one go! Ensure that you adjust the measurements and serving sizes according to your preferences.
