Easy, Clean and Quick Pesto Recipe!

Who likes eating plain carbs? NOT ME! Srsly, booooringg!!! Although, if you’re like me and count your macros then ready-made sauces and flavourings can be murder to those macros; many of them carry unnecessary sodium, sugars, carbs and fats which could set your eating plan off balance by like…a lot. NEVER FEAR! I have found the perfect pesto sauce recipe to add to your meals which is clean, healthy, low calorie, low carb and an all-round good guy!!

YOU WILL NEED

  • A good blender
  • 1/4 bag fresh spinach
  • 1/4 bag fresh watercress
  • 2 tablespoons pine nuts
  • 1 tsp olive oil
  • Juice of 1/2 lemon
  • Chopped basil
  • Chopped parsley

MAKE SOME MAGIC

  • Blend all of the ingredients apart from the pine nuts in your blender until you have a fine consistency.
  • I would recommend blending a handful at a time as the leaves can clog the blades.
  • Store your pesto in the fridge and cook some pasta, if you’re feeling adventurous bake a salmon fillet in a little salt and pepper as well.
  • Once cooked, drained and chopped add the pasta and salmon to a bowl.
  • Drizzle the fresh pesto over the pasta, pour in the pine nuts and stir for an even coating.

TIP – You can save any unused pesto by sealing it in an air tight container, it should last for about 3 days.
